Graduate Studies in Food Safety at Texas Tech University: Graduate students interested in training in food safety typically apply to and enroll in MS or PhD programs in http://ansci.colostate.edu/Animal and Food Sciences at Texas Tech University with a focus in Food Safety & Microbiology.  

Faculty members involved in food safety from each department have support for research in the areas of food science and food safety, resulting in the creation of the Interdisciplinary Studies Program in Food Science/Safety. Faculty research interests are mainly focused in food microbiology, food safety, red meat safetyfood safety education, food product development, food processing and integrated production. Graduate programs are customized to fit each student's specific interests and objectives. Students in the program receive their degree from their home departments (i.e. Animal Science, Food Science and Human Nutrition, etc.), and also a certificate of completion of the Interdisciplinary Studies Program in Food Science/Safety, which will become part of the student's official record.

Both pre- and post- harvest food safety issues are addressed in the laboratory which is part of the International Center for Food Industry Excellence (ICFIE).  ICFIE is a collaborative center with faculty members from the College of Agricultural Sciences and Natural Resources and College of Human Sciences.  There are four emphasis areas; 1) Food Safety, 2) Value-Added Processing, 3) Nutrition and 4) Outreach and Education.

We have food safety facilities that are unmatched by any laboratory in the world with a pathogen processing laboratory in the food technology building that has equipment that duplicates equipment in the meat laboratory so we can evaluate the impact of interventions on both the safety and the product quality.  The retail display cases in the laboratory allow us to study pathogen behavior under simulated industry conditions.

Undergraduate Food Safety Studies at Colorado State University: Undergraduates interested in training in food safety typically apply to and enroll in a major in Animal and Food Sciences at Texas Tech University. While there is no designated "Food Safety" major at Texas Tech University, in the Department of Animal and Food Sciences, you have several options for your education.  They offer two degrees Animal Science or Food Science.  Student majoring in animal science may choose from 4 emphases:  Animal Business, Production, Science and Meat Science.  Food science provides the basic course work for a comprehensive background in the processing and preservation of foods. Food science graduates may be employed in areas concerned with food systems management, design and development of new food products, strategies for quality assurance and food safety, or research in basic constituents of food.  Basic information for these undergraduate programs can be found here
